The main place of rearing, meaning the location where the cattle were raised for the longest period, must be within Gifu Prefecture. The cattle must be fattened by producers certified and registered by the Hida Beef Brand Promotion Council. They must be Japanese Black cattle, fattened for at least 14 months, and must achieve a meat quality grade of 3 or higher under carcass grading conducted by the Japan Meat Grading Association. Only beef that satisfies these conditions is certified as Hida Beef by the council.
