Matsusaka Beef is one of Japan’s most prestigious Wagyu brands, awarded only to Japanese Black virgin female cattle that have been raised for the longest period and completed their final fattening within the Matsusaka Beef production area in Mie Prefecture, and that are registered in the Matsusaka Beef Individual Identification Management System. The cattle must have been fattened for the longest period within the Matsusaka Beef production area, and their final fattening location must also be within that same area. In addition, cattle must be introduced into the Matsusaka Beef production area before reaching 12 months of age, and any movement after introduction is limited to within the production area. Through these clearly defined management standards, the quality, origin, and rearing history of Matsusaka Beef are carefully protected.


One of the major characteristics of Matsusaka Beef is that it is limited to virgin female cattle. Such cattle are generally considered to have finer meat texture, softer fat quality, and a more delicate flavor profile.
